Because film still gives better results than digital.
Because nothing in digital can render a black and white print that is as beautiful and as archival as a silver (or platinum) gelatin print.
Simply put, digital is great for quick imagery, some fashion, tabletop work but film still produces a finer product. Because it can be turned around so much more quickly and cheaply digital has become the commercial standard, but anything that requires a large range of light (high contrast images like hers, landscapes, some fashion) need to be shot in film or done in HDR.
